  • Veggies
  • 1 eggplant, peeled cubed
  • 1 zucchini, cubed
  • 1 yellow squash, cubed
  • 8 oz. mushrooms, quartered
  • 1 red onion, sliced
  • 1 red bell pepper, cut into strips
  • 3 garlic cloves, sliced
  • 1/2 C. olive oil
  • salt and pepper

  • 4 C. raw spinach
  • 3 garlic cloves
  • 1/3 C. low-fat mayonnaise
  • 1 tbsp vegetable oil
  • 3 tbsp parmesan cheese
  • salt and pepper
  • Wrap 6 burrito-size low-fat flour tortillas


1. Before you do anything, preheat the grill and grease it.

2. Get a large roasting pan. Toss in it the veggies with oil, salt, and pepper.

3. Place the garlic in a small piece of foil and wrap it around it.

4. Lay it along with the other veggies on the grill. Cook them for 12 to 16 min until they become soft.

5. Get a blender: Place in it all the spinach spread ingredients. Blend them smooth.

6. Spread the mixture over the tortillas. Top them with the grilled veggies and wrap them tightly.

7. Serve your wraps warm.

8. Enjoy.
